Grain Free Granola | Cacao + Peanut Butter
As my taste has changed with eating real whole food, I no longer crave sugary or processed desserts or treats. I crave granola.
Not just any granola, homemade granola.
When I transitioned to a whole foods diet, a granola recipe from one of my favorite blogs 100 Days of Real Food opened my eyes to the delicious homemade version. I love granola for it versatility. I can add any ingredients that sound good and it’s easily adaptable for different diets.
Don’t let the title fool you, I am a carb lover! But, I like to balance the amount of grains I eat in a day, and I tend to go for a carb heavy lunch and sometimes dinner. To break my oatmeal streak, I came up with a grain free granola option. This one is flavored with raw cacao powder and natural peanut butter. Also, there are no added oils or refined sugar!
The ingredients I use in this grain free granola include super foods like raw cacao powder and pumpkin seeds. Raw cacao powder is the unprocessed version of chocolate. It is simply the bean from the cacao plant and is full of magnesium, iron, and antioxidants. Pumpkin seeds (or pepitas) are also great sources of magnesium, Omega-3s, and protein. In fact, they are one of the richest sources of protein in a plant based diet!
I make this recipe on a Sunday and keeps in a container in my pantry for at least two weeks. I’m loving it with Dream Blends Quinoa + Rice milk because it is naturally sweet.
